KHAMAN DHOKLA OR GROUND FLOUR DHOKLA
Gujarati cuisine is famous for it's finger-licking and enjoyable snacks. Dhokla is an essential part of Gujarati cuisine.It is at the top of the popularity list because it is the best breakfast
option as it is made by steaming instead of frying.
It is a soft and spongy snack which can be enjoyed at any time of the day.It has a slightly sweet and tangy taste so it is loved and eaten all over our country.
TYPES OF DHOKLA :
DHOKLAS ARE OF TWO TYPES :
No doubt, gram-flour is a by-product of chana dal but the taste of both dhoklas are a bit different.
Here is an easy way to cook super delicious khaman dhokla.
Preparation time : 10 minutes
Cooking time : 20 minutes
Total time : 30 minutes
INGREDIENTS FOR DHOKLA :
Gram-flour : 1 cup
Semolina : 1/2 table spoon
Fresh yogurt : 1/4 cup
Turmeric powder : 1/4 spoon
Eno fruit salt : 1 small sachet(without any flavour)
Cooking oil : 1 spoon
Carom seed : 1/4 spoon
Finely chopped green chili : 2
Lemon juice : 1 spoon
Sugar : 1 full spoon
Salt : 1/2 spoon or according to taste
Asafoetida(hing) : 1 pinch
Water : 1/4 cup or as required
INGREDIENTS FOR TEMPERING :
Cooking oil : 1 table spoon
Asafoetida : 1/2 tea spoon
Black mustard seed : 1 spoon
Sugar : 1 spoon
Chili slit length wise and cut into halves : 4
Curry leaves : 10
Water : 2 cup
INGREDIENTS FOR GARNISHING :
Finely chopped green coriander leaves : 2 spoon
Coconut powder : 2 spoon
INGREDIENTS OF DHOKLA SPECIAL SAUCE :
Washed and chopped green coriander leaves : 1 small bowl
Mint leaves : 10
Green chili : 2-4
Black salt : 1 tea spoon
Asafoetida (hing) : 1 pinch
Lemaon juice : 1 table spoon
Ginger : 1 inch
Fresh yogurt : 1 small bowl
Roasted cumin seed powder : 1 tea spoon
Salt : 1 tea spoon or as required
PREPARATIONS :
[If you are using pressure cooker to cook dhokla then remove it's whistle.]
[If you want to use kararhi to cook dhokla , choose a karahi with a tight lid.]
COOKING OF DHOKLA :
[The reason of using butter paper is that by using it dhoklas come out of the tray or bowl very easily without sticking.]
[Do not fill the tray or bowl completely,leave some place empty.]
[If you are using pressure cooker,put a small stand in the cooker and then put the bowl of batter on it.]
[If you are cooking dhokla in a microwave then place the tray of batter in it only for 5 minutes at high power.]

GARNISHING OF DHOKLA :
Add finely chopped coriander leaves and coconut powder on the face of dhokla.

PREPARATIONS :
- In a large bowl,add gram-flour,semolina,turmeric powder,salt sugar,lemon juice,carom seed,cooking oil and green chili.
- Then add fresh yogurt to the mixture.
- Now, add water slowly- slowly and mix it very well to remove all the visible lumps.
- Continue mixing for 1 minute.
- Then let the batter rest for 10 minutes.
- Boil some water in a steamer or pressure cooker.
[If you are using pressure cooker to cook dhokla then remove it's whistle.]
[If you want to use kararhi to cook dhokla , choose a karahi with a tight lid.]
COOKING OF DHOKLA :
- Grease the inner side of the tray or bowl with coking oil.
- Then place butter paper in the inner side of the tray or bowl.
[The reason of using butter paper is that by using it dhoklas come out of the tray or bowl very easily without sticking.]
- Put the cooker or pressure cooker on high flame and add some water and let it boil.
- Then add Eno fruit salt to the batter and stir it quickly in a single direction.
- Now,the batter is ready to place in the tray or bowl.
- Immediately pour the batter in the tray or bowl.
[Do not fill the tray or bowl completely,leave some place empty.]
- Then put the tray in the steamer and cover the cooker or karahi with the lid.
- Let the batter steam for 20 minutes on high flame.
[If you are using pressure cooker,put a small stand in the cooker and then put the bowl of batter on it.]
[If you are cooking dhokla in a microwave then place the tray of batter in it only for 5 minutes at high power.]
- Check if water has not evaporated after every 10 minutes.If it happens, add 2 cups of water again in the cooker.
- When 20 minutes has been completed,then open the lid and insert a tooth-pick or knife in to the dhokla,if the toothpick comes out clean,then the dhokla is ready.If not then cook for 1-3 minutes more .
- Take the tray or bowl out of the cooker.
- Let it cool for 10 minutes.
- Then separate the dhokla from the corner and the side of the tray or bowl with the help of a knife.
- Take it out in the plate .
- Cut it into small squares.
- Remove the tissue paper from dhokla.
- Bring the soft and smooth face of dhokla on the top because it looks amazing for serving.
PREPARATION OF TEMPERING FOR DHOKLA :
- Heat cooking oil in a pan for 1 minute on high flame.
- Add asafoetida ,mustard seed,curry leaves,green chilies and turn the flame low.
- After around 30 seconds, add 2 cups of water and mix it well.
- Then add sugar in it and cook on high flame for 3 minutes.
- Then switch off the stove and pour this mixture on dhoklas properly.
GARNISHING OF DHOKLA :
Add finely chopped coriander leaves and coconut powder on the face of dhokla.
HOW TO PREPARE DHOKLA SPECIAL UNIQUE SAUCE :
- First of all,add coriander,mint leaves,green chili, asafoetida and ginger in a blender.
- Then add lemon juice,roasted cumin seed powder,black salt and white salt as required.
- Blend all the ingredients in a blender with some water till it got smooth.Do not add too much water while blending the ingredients because coriander and mint both have a quite a bit of water and they will release it.
- Add yogurt to the blended mixture and blend it only for 30 seconds.
- Check the taste of sauce and add more salt and lemon if required.
NOW,THE MOUTH-WATERING DHOKLA WITH FRESH,TART,SWEET AND SPICY SAUCE IS READY.
