Yum yum aam panna

AAM PANNA - A PERFECT SUMMER COOLANT

In India, summers are incomplete without mangoes. Aam Panna is the best summer drink rather than drinking the other unhealthy drinks,available in market . Aam Panna is a desi hit which is not only refreshing but also energizing.It is an Indian summer drink made out of green mangoes or unripe mangoes called kairi. It is the best beverage to beat the scorching heat.I am very excited to share this wonderful recipe with all of you.....


INGREDIENTS FOR AAM PANNA :

Medium size unripe mango   : 3
Sugar or jaggery                    : 3-4 table spoon
Common salt                         : 1/2 tea spoon
Black salt                               : 1/2 tea spoon
Black pepper powder             : 1/2 tea spoon
Paste of mint leaves               : 1/4 tea spoon
Roasted cumin seeds powder : 1/4 tea spoon
Chilled water                          : 2 glass
Ice cubes                                 : as required


Preparation time  : 15 minutes
Cook time            : 5 minutes
Total time            : 20 minutes


PREPARATION :

  • First of all, rinse the unripe mangoes with water properly.

  • Then remove the skin of mango with the help of a peeler.


  • Now, remove the pulp of mango in the pieces with the help of a knife.


  • Then place the pieces of pulp in the pressure cooker or pan and add 2 cups of water.


  • Now, pressure cook for 2 whistles on the medium flame or for about 12-15 minutes.


          [You can also boil the the raw mangoes without peeling or cutting before boiling.But i prefer               to peel it first because this process makes the recipe easy and helpful.]

  • After pressure cooking, the mangoes become soft and tender.


  • When pressure settle down on it's own then remove the lid.




  • Now pour the contents of pressure cooker in a strain.Do not discard water.Use this water to make Aam Panna drink.


  • Let the boiled pulp cool at the room temperature.Place them in a bowl.


  • Always add  double amount of sugar or jaggery to the mango pulp.The ratio of mango pulp and sugar should be 1:2.So before adding sugar to mango pulp measure the amount of mango pulp in a measuring bowl.


  • Then add the measured sugar in the pulp.



              [When you make aam panna with sugar,it will have  a light creamish or lemon yellow                            color.But  when you use jaggery in place of sugar then it is taste becomes different.The                        color of Aam  Panna made with jaggery .]

  • Then blend the mixture in the blender.

              [You could also use a churner to blend the Aam Panna.]

  • Panna is on a thick side.Add water to dilute and adjust seasonings.


  • Add some ice cubes.



  • Now, the tangy and sweet Aam Panna to ready to serve.


  • You can garnish it with some mint leaves and lemon wedge.

  • It prevents diarrhoea which is quite common in summers due to the intense heat.
